Ingredients for your hearty beetroot soup:

  • 1 tablespoon Coconut Oil
  • 1 finely chopped onion
  • 1 teaspoon sea salt
  • 1 teaspoon crushed Garlic
  • 1 teaspoon finely chopped ginger
  • 2-3 large beetroots peeled and chopped
  • 4 cups vegetable stock
  • 1/4 cup coconut milk
  • Roasted chickpeas or Toasted pistachios


  1. Heat the coconut oil in a large pot over medium heat.
  2. Add onions and salt and cook until the onions are soft and translucent.
  3. Add garlic and ginger and stir for approximately 5 minutes.
  4. Add chopped beetroots.
  5. Pour vegetable stock over beetroots (ensure this is covering the beetroots).
  6. Bring to boil and reduce heat. Let the soup simmer for about 20-40 minutes until beetroots are tender.
  7. Blend the soup into a smooth puree.
  8. Return soup to hot pot once pureed and add coconut milk and salt to taste.
  9. Ladle your soup and include roasted chickpeas or toasted pistachios.
